Often credited with starting the Tex-Mex cooking craze, Jane Butel published her first cookbooks on New Mexican and American Mexican food in the 1960s. Sixteen cookbooks later, Jane now operates her own cooking school. In fact Bon Appetit has named her school one of the "Best in the U.S."

Join Jane for a weekend or five nights of cooking fun, learning hands-on to prepare traditional and innovative Southwestern dishes. From tortillas, moles, and posole to menu development and presentationJane teaches her students in a thorough, yet fun manner.

Cooking classes are taught in a variety of locations, from Jane's lovely Corrales home to a professional kitchen in Santa Fe. All feature a team approach, with Jane discussing the recipe's history and ingredients then everyone breaking off and making the dish for the group to enjoy.

Jane also invites you to join her for a culinary tour of the Colonial Cities of Mexico Sept 13-20.




 

Five Night Itinerary

Day One

Afternoon arrival on your own. Tonight you'll enjoy a welcome dinner at a traditional Southwestern restaurant.

Day Two

This morning you will enjoy your first cooking lesson with Jane Butel, learning to cook traditional Mexican and Southwestern dishes such as salsa, tostados, chile dishes. A delicious lunch follows the lesson.
Your afternoon and evening are free.

Day Three

Today's lesson focuses on tortillas, tacos, enchiladas and burritos. You'll enjoy your culinary creations for lunch.

Day Four

This morning you'll learn how to prepare sopaipillas, chimichangos and various moles.
Afternoon and evening free.

Day Five

Today you'll learn some exciting chile dishes, such as Navajo Green Chile Stew and Pecos River Red Chile. Lunch follows the lesson.
Afternoon free. Tonight, you'll celebrate your cooking adventure with a graduation dinner at a well known restaurant featuring continental cuisine.

Day Six

The week concludes with a lesson on appetizers, soup, tamales, and desserts, all served with margaritas. Lunch follows the lesson.

Weekend Itinerary

Day One

Afternoon arrival on your own in Scottsdale or Corrales. At 6 pm, join Jane Butel for a welcome cocktail reception where you'll learn about the history and tradition of the dishes you'll prepare. A cooking lesson follows the reception in which you'll learn to prepare some of the basics: guacamole, tostados, various salsas, skillet bread and fajitas. Dinner follows the lesson, accompanied by margaritas.

Day Two

After continental breakfast, Jane will teach you how to prepare tortillas, enchiladas, tacos, and sopaipillas. Lunch follows the lesson.

Your afternoon is free to explore the area.

Day Three

Gather for breakfast followed by the final cooking lesson of the weekend, learning how to prepare quesadillas, tamales, chile rellenos, and carne adobado. Lunch follows the lesson and ends a fantastic weekend of Southwestern cooking.
