Not all culinary vacations are created
equal. For those of you looking for more cooking than touring this
is the experience for you. It is a chef’s stage; a unique
opportunity to work side-by-side with one of Umbria’s most
exciting emerging culinary talents. For four days, you will learn
one-on-one how to prepare, cook and present fine traditional and
creative Italian cuisine. Lessons are conducted in the kitchen of
Chef Eros Patrizi’s elegant restaurant in the heart of Spoleto.
They are 100 percent hands-on and will give you the opportunity
to learn the secrets of creating unforgettable cuisine including
a variety of antipasto, handmade pasta, fresh baked bread, marinades
and sauces, secondi, and desserts “to die for.” The
program also features an introduction to wine tasting; table presentation;
and food and wine pairings.
Your chef and instructor
is Eros Patrizi who practically grew up in the world of Umbrian
cuisine. His parents have owned a restaurant in Spoleto since 1959.
He is a protégée of Master chef Angelo Paracucchi
as well as having studied with Chef Gianfranco Vissani, two of Italy’s
most famous chefs and proudly, Umbrian. Eros has a European Master
qualification in the expert use of Umbrian products in high cuisine.
He is also a sommelier and a qualified taster of olive oil. Eros
opened his own restaurant in Spoleto in 2003.
Arrival in Spoleto and check-in at Palazzo
Dragoni. Afternoon check in at Palazzo Dragoni, a 15th century residence
transformed into an intimate four star hotel. All rooms feature
en suite bathrooms, designer linens, and antiques.

Meet Chef Eros in his
restaurant kitchen for your first hands-on cooking lesson. Classes
are restricted to a maximum of four participants. Eros’ friendly,
enthusiastic and flexible approach will enable you to participate
at your own level of competence. Today’s lesson also includes
an introduction to the wines of Umbria.
