supervising the kitchens of Villa d'Este for over 20 years. His
recipes have been the inspiration for two glorious cookbooks. He
is noted for artistic and creative presentation of regional dishes
such as risotto Milanese-style with saffron, fettuccine with fondue,
tortelli with pumpkin and artichokes, and cotoletta Milanese-style.
