Soak up the sun and warm culture of the Amalfi Coast as you discover the secrets of great Italian cooking! On this seven day culinary experience you will learn all about Neopolitan cuisine, known for pizza but which also includes more sophisticated dishes such as Il Baccala' in Casseruola con Patate and l'insalata caponata.

Your lessons will take place at the Mama Camilla cooking school where Chef Biagio and his assistants lead hands-on instruction featuring the cuisine of Campania. Chef Biagio's first cooking experiences were in his mother's kitchens where he learned to prepare ancient family recipes passed down for generations. He furthered his passion by leaving home at the age of 17 to attend prestigious cooking schools. Over his 30 year of culinary experience Chef Biagio saw the success of opening three different restaurants. Now he delights in sharing his knowledge with students from around the world.

To augment your lessons in the kitchen, you will go on excursions to local cheese and wine makers. You will also enjoy guided tours of legendary sites such as Pompeii and Capri. Accommodations are either in a tranquil bed and breakfast at the cooking school or in selected hotels in Sorrento.



Day One

You will be met by an English speaking driver and brought to Sorrento where you will check in to your cozy bed and breakfast or selected hotel which Epiculinary will be happy to assist you in reserving.

Return to Mami Camilla cooking school for welcome drinks on the patio followed by a traditional Neopolitan dinner.

Day Two

After breakfast your guide will take you to a characteristic garden that reflects the vegetation of the area. Then you will visit a historic wine cellar where you will have the opportunity to taste the wine along with local food products.

Afternoon excursion to the famed Amalfi town of Positano.

In the evening, everyone will sit down for a light dinner at the house where Mama Camilla will prepare fresh pasta and a traditional fish dish.

 

Day Three

This morning your cooking course will take place in the kitchen of a local farm where you will become expert at making genuine Neapolitan pizza. If you are traveling with others, they are invited to join you for an all you can eat pizza party that will be followed by a dessert based on fruit such as a fruit tart, fruit mouse, or rum Baba with fresh fruit.


Day Four

Today you will go into the hills to visit the oldest cheese factory in the area. The Caseificio is located on a mountain overlooking the two bays, Salerno and Naples. The cheese maker will show you how the treccia Sorrentina and the Caciovallo are prepared.

Return to the cooking school where you will learn how to prepare preserved foods and liquors such as artichokes in olive oil and limoncello. Later you will assist in the preparation of one of the faster and easy Neapolitan dinners, learning how simple the cuisine really is.

Day Five

Today travel by boat from Sorrento to Capri. This fabled island of limestone was the favorite destination for Emperors Augustus and Tiberius. Return to Mami Camilla for a cooking class and dinner.

Day Six

After breakfast, visit the ruins of Pompeii on a half-day escorted tour. Then return to Mami Camilla for a cooking class and dinner.

Day Seven

Morning check out. Time to say Arriverderci and Buon Viaggio!
